Dum pukht! Pure nomadic tradition

with the fusion of different cultures the fusion of cuisine is sure to happen. The word Dum Pukht refers to a style of cooking in which meat or vegetables are sealed in a clay pot and cooked on a slow fire over a period of time. the cooking style has its root in the era of Nawab Seraj ud Dullah and from then on this style of cooking has found its way into different cuisines including the Baloch and Afghan.

The dish in the picture is Lamb Dum Pukht that is being served in Namak Resturant Lahore. A delicious mix of tomato and mint yogurt chatnis brings the taste to a whole new level and just to add to it a 3 foot Qandhari naan goes quite well with it.

light on the stomach ; a taste that will lure you in many times, the Lamb Dum Pukht is indeed a must have!
